Anonymisation happens in your browser, before anything is sent. This is not a setting: it is the only reason why no table linking an initial to a name exists anywhere.
How to export your conversations
Open the conversation, tap the name at the top, then « Export chat » and « Without media ». Drop the .txt file you get.
Slack
A workspace export in JSON format, or the channel contents saved as .txt. Workspace exports are reserved for administrators.
Teams
Export the conversation from Microsoft 365 (« Export my data »), or save the thread as .html from your browser.
Save the thread as .eml or .mbox from your mail client, or copy it into a .txt file, keeping the dates and the senders.
Dates and senders are essential: without them, no dated record of facts is possible. If your export does not contain them, the report will say so rather than invent a timeline.
